Thankfully this Cambro 1/9 gastronorm drain shelf is designed to keep food separated from grease deposits and juices, so that any liquids can be disposed of hygienically from the high heat food tray. Drain shelves are ideal for preserving the texture of hot, steamed, battered and crisp foods ensuring they reach you customers in perfect condition. High heat trays and drain shelves boast a temperature range of -40°C to 190°C, saving the use of other trays.
